Red Velvet Chocolate Chip Cookies

Red Velvet has got to be one of my favorite cakes.
Chocolate chip cookies have got to be one of my favorite cookies.
Combine the two? Yes please!

After I signed up on Pinterest I quickly found everyone seems to have an obsession for Red Velvet. I'm in heaven. I never thought of it past cake or cupcakes.
So for my first Red Velvet non cake, I chose to recreate Baking Serendipity's recipe.
I added an extra egg from the original recipe as it was just a bit too dry for my liking, and I added some more chocolate chips.
After baking it the ideas are coming to me on all the variations I want to create on Velvet recipes (I really want to make a white chocolate velvet).

Red Velvet Chocolate Chip Cookies
Prep: 15 minutes Bake: approx 10 minutes Servings 24 cookies

Preheat oven to 375°

1/2 cup butter, softened
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1 tsp vanilla
1 tsp red food coloring
1 1/2 cups flour
1 tsp baking soda
1/4 tsp salt
1/3 cup cocoa powder
2/3 cup chocolate

Cream butter, sugars, eggs, vanilla and coloring together.
Combine flour, baking soda, salt and cocoa together and mix into creamed mixture.
Stir in chocolate chips after batter is well incorporated.
Drop by rounded teaspoonful onto parchment paper lined baking sheets.

Bake for 10 minutes.
Let cool 2 or 3 minutes on baking sheet, then move to cooling rack.
Enjoy!
