Breakfast Burritos {freezer-friendly}


Yesterday I shared my favorite, easy tender beef burrito recipe, and today is my favorite go-to breakfast burrito (or taco) recipe!
Back in the early stages of our marriage, you know the stage when you bought a house, working hard, but are still broke all the time...yeah that one? We were rummaging through the fridge trying to come with something for dinner one night, and my husband randomly made us these breakfast burritos. They are super easy to throw together and taste great. We make them for breakfast, lunch, and dinner!
When I am lazy and only have the smaller tortilla shells on hand, I don't roll them into burritos, I just have them "taco style" and they still taste great!
The best thing about breakfast burritos is that they can be made, wrapped, frozen, and reheated for a quick on-the-go breakfast.
It is really simple to double, or triple this recipe, and if you want to freeze them, make the burritos and place them on a cookie sheet in the freezer for a few hours, then wrap in plastic wrap and foil to keep while in the freezer. Then unwrap and pop in the microwave for a minute or two!

Breakfast Burritos {freezer-friendly}

1 lb. ground sausage (like Jimmy Dean or Farmland}
3 eggs
1-2 cups of shredded cheese
Jalapenos (optional)
4-6 tortilla shells

In a skillet cook sausage until no longer pink; drain fat.
Create a hole in the center of the sausage and add the eggs to the center.
Cook the eggs and sausage, scrambling the eggs into the sausage crumbles to coat the meat.
Let cook until eggs are not runny.
Divide the sausage and eggs among the tortilla shells; add cheese and jalapenos, if desired. 
Wrap into a burrito and eat or freeze.
These are also good with salsa added to them!
